π Air Fryer Method
- Peel potatoes, cut into 1cm thick chips. Soak in cold water for 10 mins to remove starch = crispier air fryer chips.
- Drain well. Pat completely dry with kitchen paper — wet chips stay soggy.
- Toss chips in 1½ tbsp oil. Spread on Bottom Rack in single layer — no overlapping.
- Preheat Breville Halo to 190°C — 3–4 mins.
- Start chips first — cook at 190°C for 8 minutes.
- While chips start: Season flour with salt, pepper, paprika, herbs. Dip fish: flour → egg → breadcrumbs. Press crumbs on gently.
- Brush or spray fish lightly with remaining oil. Place on Top Rack.
- Cook together for 12–14 minutes more. Swap racks halfway — chips go top, fish goes bottom.
- Fish is done when golden crisp and flakes easily. Chips golden and tender inside.
- Serve hot with lemon and sauce.
π‘ Pro Tip: If fish browns too fast before chips crisp, cover loosely with foil. Breadcrumbs crisp fast — keep an eye after 10 mins. Cook in two batches if racks are crowded.
