π« Chocolate Brownies
Rich, fudgy, and perfectly gooey — easy to make and impossible to resist
Ingredients
- 200g dark chocolate (approx. 50–70% cocoa)
- 175g unsalted butter
- 300g caster sugar
- 3 large eggs
- 100g plain flour
- 40g cocoa powder
- ½ tsp baking powder
- Pinch of fine salt
- Optional: 100g chocolate chips or chopped nuts
Method
- Preheat oven to 180°C / 160°C fan / Gas 4. Line a 20cm (8-inch) square tin with baking paper.
- Break chocolate into pieces. Place in a heatproof bowl with the butter. Melt gently — either over a pan of simmering water or in short bursts in the microwave — stirring until smooth. Leave to cool slightly.
- In a separate bowl, whisk the sugar and eggs together with an electric whisk for about 3–4 minutes until pale, thick, and creamy.
- Pour the cooled melted chocolate mixture into the egg mixture and gently fold together with a spatula until combined.
- Sift in the flour, cocoa powder, baking powder, and salt. Fold gently until just mixed — don't over-stir or brownies will be tough. Fold in chocolate chips or nuts if using.
- Pour the batter into the lined tin and spread evenly. Bake for 25–30 minutes.
- Test with a skewer — it should come out with moist crumbs, not clean! If wet batter sticks, bake 2–3 minutes more. Don't overbake — gooey centre is what makes them perfect!
- Leave to cool completely in the tin before cutting — they firm up as they cool. Cut into 16 squares once cold.
π‘ Tip: For extra fudgy brownies, use 50% cocoa chocolate and take them out when the centre still looks slightly soft. They will set as they cool! Store in an airtight container for up to 4 days.
